Ingredients
- 2 teaspoons unsalted butter
- 10 ounces chopped Granny Smith apples (about 2 medium apples)
- 1/4 teaspoon kosher salt
- 2 teaspoons honey
- 1 cup part-skim ricotta cheese
- 1/4 teaspoon ground cinnamon
- 2 2/3 cups quinoa (cooked)
- 1/4 cup chopped toasted hazelnuts
Instructions
- Heat butter in large non-stick skillet over medium-high heat.
- Add apples and salt; cook stirring occasionally, until apples begin to soften (about 8 to 10 minutes).
- Add honey and cook, stirring constantly, until apples are tender (about 1 to 2 minutes).
- Remove skillet from heat.
- Stir together ricotta and cinnamon in a small bowl.
- Divide quinoa evenly among 4 bowls.
- Top each serving with 1/4 cup ricotta mixture and 1/2 cup apples. Top evenly with hazelnuts.
