Best Ever Fried Rice

Ingredients
- 1 teaspoon olive oil
- 1 tablespoon olive oil
- 3 eggs whisked
- 1 frozen steamer bag of mixed diced carrots and peas, prepared per package directions
- 1 small onion, diced or ½ cup frozen onion, diced
- 3 cloves garlic, minced
- 4 cups cooked and chilled brown or white rice (or combination)
- 3 tablespoons low sodium soy sauce
- 1 teaspoon sesame oil (optional)
- sliced green onions for garnish (optional)
Instructions
- Heat 1 teaspoon olive oil in a large skillet.
- Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
- Add the tablespoon of olive oil into the pan.
- Saute prepared peas, carrots and onion to the pan and cook until tender, about 3 minutes.
- Stir in garlic and cook for an additional minute.
- Add the cold rice and sauté for 3 for 4 minutes.
- Add the eggs to the pan and stir in soy sauce and sesame oil. Cook for a couple minutes to heat through.
- Serve immediately with green onions, if desired.
Serving size is 1/2 cup.
