Ingredients
- 8 hard-boiled eggs
- 1/2 cup plain Greek yogurt
- 2 teaspoons Dijon mustard
- 3 tablespoons finely diced celery
- 3 tablespoons finely diced onion
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt (or to taste)
- Freshly ground black pepper (to taste)
- Leaf lettuce
- Whole wheat bread, toasted
Instructions
- Peel and chop the hard-boiled eggs and transfer them to a medium mixing bowl (hand chop or via food processor).
- Add in the Dijon mustard, celery, red onion, onion powder, paprika, salt and pepper.
- Stir to combine.
- Serve on toasted wheat bread with leaf lettuce.
