Ingredients
- 2 cups farro
- 1/2 cup toasted pistachios
- 1 teaspoon grated lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon finely grated, peeled ginger
- 1/3 cup olive oil
- 1 pinch black pepper, plus more to taste
- 1 pinch salt, plus more to taste
- 1 cup chopped cilantro, mint, or parsley
- 1 chili pepper, sliced into very thin rings
- 1/3 cup golden raisins
Instructions
- Cook farro per instructions. Rinse under cold water and set aside.
- Coarsely chop pistachios.
- Whisk together lemon juice/zest, ginger, salt/pepper.
- Combine farro, pistachios, raisins, oil mixture, herbs, and pepper.
- Cover, chill. Can be made ahead one day.
