Ingredients
- 15-ounce can black beans, drained and rinsed
- 3 large eggs
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla
- 1/4 cup unsweetened cocoa powder
- 2/3 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 8-ounce premade or homemade blackberry jam
Instructions
- Preheat oven to 350 degrees.
- Puree black beans in food processor until a rough paste (can add 2 to 3 tablespoons of water to aid in puree process).
- In a large bowl, mix bean puree, eggs, oil, and vanilla.
- In a separate bowl, combine cocoa powder, sugar, baking powder, and salt.
- Add dry ingredients to wet ingredients, then stir in chocolate chips.
- Grease an 8x8- or 9x9-inch pan, line with parchment paper, and pour in batter.
- Pour jam on top and use a toothpick to swirl into brownie.
- Bake 25 to 35 minutes for fudgy brownies (longer if desired).
