Pumpkin Baked Oatmeal

Ingredients

  • 2 large eggs
  • 3/4 cup unsweetened pumpkin puree
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1/2 cup unsweetened almond milk
  • 1 1/2 cup rolled oats
  • 1/2 cup white whole wheat flour (or all-purpose gluten-free flour)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350 degrees F
  2. Spray a 9” x 9” inch baking dish
  3. Mix oats, flour, pumpkin pie spice, baking powder, salt, and chocolate chips (if using) in a medium bowl
  4. Transfer batter into baking dish and use a spatula to evenly spread out. Sprinkle with more chocolate chips, if desired.
  5. Bake at 350 degrees for about 25 minutes.
  6. Let cool for at least 10 minutes before slicing and serving.
